A polyphenol is a type of naturally occurring compound characterized by multiple phenolic structures in its chemical makeup. Polyphenols are widely found in plants and occur in many fruits, vegetables, herbs, teas, spices and other plant-based foods.
Polyphenols are a broad and chemically diverse group. Flavonoids, including anthocyanins, are one major category within the larger polyphenol family.
Where Polyphenols Are Found
Polyphenols occur throughout the plant kingdom and are found in foods and botanicals such as berries, grapes, apples, onions, cacao, tea, coffee, herbs, spices, nuts and seeds.
The types and amounts present can vary considerably among plants and may be influenced by variety, growing conditions, ripeness, storage, preparation and processing.
Evidence & Research
Polyphenols are widely studied for their biological activity and their interactions with cellular signaling, oxidative processes, inflammation-related pathways and the gut microbiome.
Because polyphenol describes a large group of different compounds, research findings cannot automatically be applied to every member of the group. Absorption, metabolism, bioavailability, amount consumed and the specific compound or food being studied all influence the effects observed in humans.
Why Context Matters
The presence of polyphenols does not by itself establish that a food, herb or supplement has a particular health effect. Different polyphenols have different properties, and foods containing them also contain many other nutrients and plant compounds. Claims are best understood by looking at the specific compound, source and evidence being discussed.
